Left-over Christmas Turkey Curry recipe

Ingredients
- Cooked turkey meat leftovers cut into bite size pieces
- 2 medium onions
- 3-4 green chillies, finely chopped
- 2-3 cloves garlic, crushed
- Ginger – freshly grated 1in or powder tsp
- 2tsp turmeric
- 2tsp ground coriander
- ½tsp garam masala
- Salt to taste
- Tin of coconut milk
- Fresh coriander to garnish
Method
- Gently fry onions in cooking oil until lightly golden brown Add green chillies, garlic and ginger fry gently until you can smell the garlic is cooked.
- Add turmeric, ground coriander, garam masala, salt, and keep stirring until spices are lightly fried (add a dash of water to keep from sticking).Add the coconut milk and stir well for 10-15 minutes, add water if mixture starts to stick to the sides of the pan.
- When oil separates add cooked turkey pieces and stir together in spices for at least 10 minutes.
- Add water to stop it from sticking to the pan, just gently scrape off the sides.
- When the oil starts to separate, add some water to create a sauce.
- Add more salt if necessary and then add chopped coriander and leave to simmer for a further five minutes.
- Serve.
