AS the festive season becomes a distant memory, why not make a foodie new year resolution and escape from the rut of cooking the same meals week in and week out?
Try at least one new recipe a week and you’ll have an additional 50 dishes in your repertoire by this time next year. Take a look at what’s in your cupboards, and search on the internet for recipes to use up some of those store cupboard hangers on. It’s amazing what you’ll find by searching on a specific ingredient or two.
Or head for your local farmers’ market, where all the stallholders either grow or produce what they’re selling. They’re always a great source of ideas for how to cook their product and many have free recipe sheets for customers, or favourite recipes to share if you ask their advice.
Here’s one to get you started:
Winter Tart – serves four to six
Wash and slice six to eight clementines into rings.
Put in a shallow pan, just cover with water and add 3oz sugar.
Gently bring to the simmer and poach for about 10 minutes, until the rind is just tender.
Strain carefully and allow slices to cool. Return liquid to the pan and boil until reduced and syrupy.
Line an 8in flan tin with shortcrust pastry, and spread 3tbsp marmalade over the base.
Cream together 4oz butter and 4oz caster sugar until light and fluffy.
Gently add two beaten eggs and 4oz ground almonds, then spread the mixture over the marmalade.
Carefully arrange the clementine slices on the top.
Bake at 170C for 40 to 45 minutes.
Allow to cool for a few minutes then brush or pour the reserved clementine liquid over the top.
